Description

The gyuto is Japan's answer to the Western chef's knife. Same general shape (curved belly, pointed tip), but a lighter blade, a thinner edge, and better steel. A 210 mm blade is the versatile middle.

VG-10 is a well-known Japanese cutlery steel. It takes a truly sharp edge and holds it. Treat it like a cutting tool, not a lever, and it will outlast you.

Sharpening: 14° per-side edge. Maintain with a ceramic hone or whetstones. Avoid pull-through sharpeners.
