Description

The 12-inch cast iron skillet is the most useful single pan in a working kitchen. It sears steaks better than stainless (thermal mass), bakes cornbread better than aluminum (heat retention), and takes an oven-to-table transition without a moment's complaint (looks the part).

This is a heavier-than-average skillet — 7.2 pounds. That is a feature, not a bug. Thicker walls hold heat when a cold steak hits them.

Care: hand-wash with warm water and a stiff brush. Do not use soap on a seasoned surface. A cared-for pan gets darker and glassier every year for decades.
